Fillets do not break apart and the rack has enough space in it to add a topping to the fish after flipping…I cook walleye, snapper, roughy and others….the real beauty of these is that you can sit the rack right over the burner on a gas grill and get even heat while letting the handles stay outside the grille….I do four at a time 10 min or so perfect fish…. Top side down first…flip to skin side and add toppings etc….enjoy!
